Indulge in the Festive Full-Blooded Wagyu Beef Striploin

We take pride in offering only the finest cuts of beef, paired with the rich and flavorful Café de Paris sauce. Each month, we select an exclusive cut to elevate your dining experience. Therefore, ensuring a new way to indulge in this French classic. This year, we’ve featured some of the most exceptional beef selections, each with its own unique qualities.
From December to January, a festive time of indulgence, we served a truly premium cut—full-blooded Wagyu striploin with a marbling score (MBS) of 5-6. Full-blooded Wagyu comes from 100% pure Wagyu cattle and is prized for its rich marbling. This gives it a deep umami flavor and melt-in-your-mouth tenderness. The intramuscular fat creates a buttery texture, making it a perfect match for our signature Café de Paris sauce. It was the ultimate way to celebrate the season with a touch of luxury.
The month of love with Wagyu Hanger Beef Steak
For February, we introduced the Wagyu Hanger Steak, an underrated yet intensely flavorful cut. Often referred to as the “butcher’s cut” due to its deep, beefy taste, hanger steak is prized for its tender grain and rich texture. With an MBS of 5-6, the high-quality Wagyu brought out an extra layer of succulence, making it a true pleasure for steak lovers. When combined with our creamy, herbaceous Café de Paris sauce, this dish delivered a perfect balance of bold flavors and melt-in-your-mouth goodness.
March with Black Angus 270-Day Grain-Fed Australian Beef Ribeye
This month, we turn to a steakhouse classic—the Black Angus ribeye. Sourced from premium Australian Black Angus cattle, this ribeye is grain-fed for 270 days, ensuring a well-rounded depth of flavor and superior tenderness. The extended grain feeding enhances the beef’s natural marbling, creating a juicy, succulent bite in every slice. Its generous fat content makes ribeye the perfect canvas for the rich, buttery notes of our Café de Paris sauce, promising a decadent and satisfying experience.
At Victoria by Cocotte, we carefully select our beef based on its origin, marbling, and aging process. Our Café de Paris sauce adds an indulgent, aromatic touch that perfectly complements each cut. We also pair each steak with a carefully selected wine to highlight the flavors, creating a balanced and memorable meal. We’d love for you to try something new—taste the different flavors and textures of our beef, and see how the wine pairs perfectly with each cut.

Beef lovers know the History of Café de Paris Sauce
The origins of Café de Paris sauce trace back to Switzerland in the 1930s at the famed Restaurant Café de Paris in Geneva. This rich, flavorful butter-based sauce quickly became a legendary pairing for entrecôte steaks. Made with a blend of butter, mustard, herbs, and spices, it’s an irresistible complement to premium beef. Today, this sauce remains a staple in French cuisine and is celebrated worldwide for its depth of flavor and luxurious texture. At Victoria by Cocotte, we honor this tradition by crafting our Café de Paris sauce to enhance the natural richness of our steaks.
